Deviled Crab

  
 

from Myrtie

  

Coffee cream has 20% fat.
Whipping cream has 30% fat.
Heavy cream has 36% fat.

3 small cans crab meat (flaked)
2 table spoon pimento (chopped fine)
1 small can mushrooms (chopped fine)
2 table S. flour
1/8 b. butter

Brown slightly
add 1/2 pt. coffee cream
1 cup milk
3 egg yolks
2 ta. S sherry
1 ta S. parsley

Add crab & other things
Cook 3 minutes
fold in stiffly beaten whites.

Put in ramkins
cover with buttered bread crumbs
Bake 20 minutes.
