Cheese Souffle

  
 

 

  
 

1 cup grated cheese
1 cup very thick white sauce
3 egg yolks
3 egg whites

add cheese to hot white sauce and stir till melted:
cool:
add beaten yolks
fold in stiffly beaten whites:
Pour in greased basking dish stand in pan warm water
bake in moderate oven 50 or 60 min.

Sometimes Aunt Pit didn't tell us the exact oven temperatures. Here's a cheat sheet.
Cool oven 250°F
Slow oven 250–350°F
Moderate oven 350–375°F
Hot oven 375–450°F
